A few tips for iPad/iPhone (I believe similar for other mobile OS):
If you want to install a German keyboard open anything that brings up the keyboard eg typing an email, then press and hold the world symbol bottom left. This pops some options, select keyboard settings and at the top select keyboards, add new keyboard and scroll down to the one you want.
Alternatively go to settings -> General -> keyboard -> keyboards -> add new keyboard ...
To switch between keyboards when your typing just tap the world symbol and it cycles through installed keyboards (including emojis)
If you don't want to install/switch keyboards just press and hold the appropriate letter eg for ü press u. This pops a box with every language option, slide to the the one you want.
